1 mango, stoned and chopped
5 sprigs fresh mint
1/2 pineapple, peeled and cored

A thick, tropical juice with a cool mint finish.
Makes: about 2 to 3 glasses (around 600ml). Prep: 15 minutes.
How to make it
- Cut the papaya in half, scoop out the seeds, peel it and cut it into chunks.
- Peel the mango and cut the flesh away from the stone.
- Peel and core the pineapple and cut it into chunks.
- Pick the mint leaves off their stalks.
- Feed the mint in between the pineapple pieces, then stir and serve.
Tips and swaps
Papaya and mango both make a thick juice, so the pineapple helps thin it. For a lighter drink, add ice or a splash of cold water. A ripe papaya is yellow-orange and gives slightly when pressed.
