A sweet, deep pink juice that uses the whole beetroot, leaves and all. Apple, pear and strawberries keep it fruity, so it's an easy way into beetroot juice.
Makes: about 2 glasses (around 500ml). Prep: 10 minutes.
How to make it
- Cut the leaves off the beetroot and wash them.
- Scrub the beetroot and cut it into chunks.
- Core the apple and pear and cut them into quarters.
- Hull the strawberries.
- Feed the beet greens in between the harder fruit, then stir and serve.
Tips and swaps
Buy beetroot with fresh leaves still on, as they're often thrown away. If yours came without leaves, chard or spinach works instead.
